Creamy Tortellini Tomato & Pepper Soup

Spicing up your typical bowl of tortellini with a punch of peppers and Diestel Ground Turkey.

Ingredients

  • 1 lb Ground turkey
  • 1 tbsp Olive oil
  • 1 Onion (finely diced)
  • 2 Bell peppers (diced)
  • 1 Serrano pepper (chopped)
  • 1 Jalapeño (chopped)
  • 4 Minced garlic cloves
  • 1 tsp Italian seasoning
  • 1 tsp Paprika
  • 1/2 tsp Cumin
  • To taste Salt and pepper
  • 2 cans Fire Roasted Tomatoes
  • 2 cups Chicken broth
  • 1/2 cup Heavy cream
  • 1 cup Tortellini

Directions

  1. In a large pot, heat olive oil over medium heat. Saute onion, peppers, and onion until softened.
  2. Add ground turkey and spices. Cook until turkey is browned and cooked completely.
  3. Add the fire-roasted tomatoes and broth. Bring to a boil and then simmer for 10 minutes.
  4. Stir in the cream and cooked tortellini.
  5. Serve immediately and enjoy!
