Winter Turkey Soup

When you need a cozy, warming winter soup, make this Whole30, keto & gluten-free soup. Reminiscent of stuffed peppers, this savory soup is a perfect weeknight dinner or make-ahead week’s worth of lunches.

Ingredients

  • 1 lb Diestel Ground Turkey
  • 2 tbsp olive oil
  • 1 yellow onion (chopped)
  • 1 red bell pepper (chopped)
  • 2 green bell pepper (chopped)
  • 1 tsp italian seasoning
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 28 oz can of crushed tomatoes
  • 4 cups chicken broth
  • 1 tbsp balsamic vinegar
  • 1 cup cauliflower rice

Directions

  1. In a large soup pot, heat olive oil over medium heat. Add onion and peppers and sauté until soft.
  2. Push your veggies to the side of your pan and brown the ground turkey.
  3. Add the italian seasoning, paprika, salt and pepper.
  4. Once turkey is cooked, add the crushed tomatoes and broth.
  5. Bring to a simmer and cook for 15 – 20 minutes.
  6. Stir in the balsamic vinegar and cauliflower rice. Cook for a few minutes until rice is tender.
  7. Season to taste and serve.
