Sweet Potato Breakfast Hash

Saturday Brunch just got better! Try this paleo-friendly, Sweet Potato Breakfast Hash complete with Diestel Breakfast Turkey Sausage.

  • 3 Tbsp Olive Oil
  • 1/2 lb Diestel Turkey Breakfast Sausage
  • 2 Sweet Potatoes
  • 1 Onion
  • Pinch of Salt
  • Pinch of Pepper
  • 4 Eggs
  • Green Onion for garnish


  1. Preheat oven to 400 degrees.
  2. Heat a large skillet over medium heat and add 1 tbsp of olive oil. Cook Diestel Breakfast Sausage until almost completly browned.
  3. Add onions and cook until the sausage is completely brown and onions are soft. Set aside.
  4. In a seperate pan, add 2 tbsp of olive oil to the pan. Then cook sweet potatoes in pan. Add salt and pepper to taste. Cook until the outside is slightly brown.
  5. Transfer potatoes to the skillet with the sausage. Create 4 indents in the hash. Then crack eggs gently and place in each indent.
  6. Place the entire skillet in the oven for 10 – 15 minutes or until eggs are cooked.
