Leftover Turkey Soup

Slow Cooker Turkey Soup

Turkey surplus? Make your leftovers sing with this slow-cooker turkey soup recipe.

Ingredients

  • 3 cups Diestel leftover turkey (shredded or diced, any part of bird)
  • 7 cups turkey stock or broth
  • 1 cup carrots (chopped)
  • 1 cup celery (chopped)
  • 1 cup onion (chopped)
  • 2 bay leaves
  • 1/2 tsp thyme
  • 1/8 tsp pepper
  • 8 oz shell pasta (cooked seperately)
  • 1/8 tsp salt

Directions

  1. Add the stock or broth, turkey, carrots, celery, onion, bay leaves, thyme, and pepper to the slow cooker.
  2. Cover and cook on low for 8 hours.
  3. After 8 hours, cook the pasta for about 1 – 2 minutes less than the package directions on stovetop.
  4. Once the pasta is cooked, drain and add to the slow cooker.
  5. Continue to cook on high for 1.5 more hours.
  6. Serve and enjoy!
