White Bean Turkey Chili

Ingredients

  • 3 lbs Diestel Ground Turkey
  • 1 tbsp olive oil
  • 3 cups onion (chopped)
  • 5 cloves garlic (chopped)
  • 1 4.5 oz. can diced green chiles
  • 1/2 tsp salt
  • 1/2 tbsp cumin
  • 1/2 tbsp oregano
  • 2 tsp chili powder
  • 1 bay leaf
  • 4 cans cannellini beans
  • 2 cups chicken broth
  • 1/2 cup sour cream
  • Shredded jack cheese (for garnish)
  • Avocado (for garnish)
  • Jalapeno (for garnish)

Directions

  1. In a large soup pot, heat olive oil over medium heat.
  2. Saute onions and garlic until softened.
  3. Add the Diestel Ground Turkey and cook thoroughly.
  4. Add the green chilies, salt, cumin, oregano, chili powder, and bay leaf.
  5. Blend 1 can of cannellini beans with 1 cup of broth in a blender until pureed.
  6. Add to the pot with the remaining beans and broth.
  7. Bring to a boil. Reduce heat to simmer and cook for 30 minutes.
  8. Stir in sour cream and cook until well combined.
  9. Top with your favorite garnishes - we topped with shredded cheese, avocado, and jalapeno.
