Turkey Veggie Summer Rolls

Ingredients

  • 6 slices Turkey Deli Meat
  • 1/4 cup Creamy Peanut Butter
  • 1/8 cub Brown Sugar
  • 3 gloves Garlic Minced
  • 1 tsp Ginger (grated)
  • 2 tbsp Soy Sauce
  • 1/2 tbsp Sriracha
  • 1/2 tbsp Rice Vinegar
  • 1/8 cup Water
  • 3 pieces Rice paper
  • 3 pieces Lettuce
  • 3 tbsp Carrot (chopped)
  • 3 tbsp Cabbage (chopped)

Directions

  1. First, prep your sauce by mixing together the peanut butter, brown sugar, garlic, ginger, soy sauce, sriracha, rice vinegar and water to a bowl. Whisk until smooth and adjust the amount of water depending on how thick you'd like your sauce.
  2. Take a large bowl and fill with water. Then place your rice paper in the bowl for a few seconds until it gets slightly soft. Make sure not to let it sit in the water too long or else the paper will rip when you are forming your wraps.
  3. Lay out your moist rice paper on a plate and then add two rolls of Turkey Deli Meat, 1 tbsp of chopped carrots, 1 tbsp chopped cabbage and a piece of lettuce.
  4. Repeat process until you have the desired number of summer rolls. Then slice in half and serve alongside your peanut sauce.
