Turkey Split Pea Soup

Ingredients

  • 1 (16-oz) package dried green split peas, rinsed
  • 1 Diestel Smoked Turkey Thigh or 2 Diestel Smoked Turkey Drumsticks
  • 1 cup chopped carrots
  • 1 1/2 cup chopped yellow onion
  • 3 ribs celery, chopped (leaves optional)
  • 4 cloves garlic, minced
  • 2 bay leaf
  • 1/4 cup chopped fresh parsley
  • 1 tsp. cumin
  • 1 tsp. thyme
  • Salt and pepper to taste
  • 6 cups turkey/chicken broth

Directions

  1. Layer ingredients in slow cooker in the order given, adding the broth last. Do not stir ingredients.
  2. Cover and cook on high 4-5 hours or on low 8-10 hours until peas are very soft and turkey falls off the bone.
