Turkey Meatball and Tortellini Soup

Ingredients

  • 12 oz Ground Turkey
  • 2 tbsp Breadcrumbs
  • 2 tbsp Parmesan
  • 2 tbsp Parsley (chopped)
  • 1 Egg
  • 1 glove Garlic (minced)
  • 1/2 tsp Salt
  • 1 tbsp Butter
  • 2 stalks Celery (diced)
  • Onion (diced)
  • 1 Carrot (chopped)
  • 2 gloves Garlic
  • 7 Cups Chicken Broth
  • 8 oz Spinach Tortellini
  • 1 1/2 cup Spinach

Directions

  1. In a medium bowl, combine the turkey, breadcrumbs, parmesan, parsley, egg, garlic and salt. Then form small, 1-inch meatballs and set aside on a plate.
  2. In a large soup pot, add the butter and heat on medium until melted. Then add the celery, onion, carrots, and garlic.
  3. Cook vegetables until they are tender. Then add chicken broth and bring to a boil.
  4. Once boiling, add the meatballs and cook for 4 minutes.
  5. Once meatballs are cooked, add the tortellini to the soup and cook according to the tortellini packaging.
  6. Once the tortellini are finished cooking stir in the spinach until it is soft.
  7. Serve and enjoy!
