Turkey Enchilada Casserole

Ingredients
- 1 1/2 lbs. Diestel 100% Ground Turkey
- 1 small onion, chopped
- 1 clove garlic, pressed
- 1 1/2 cups picante sauce
- 1-10 oz. package frozen chopped spinach, thawed and well drained
- 1 cup tomato sauce
- 2 medium tomatoes, chopped
- 1 large bell pepper, diced
- 1 Tbsp. lime juice
- 1 tsp. salt
- 12 corn tortillas
- 1 cup yogurt, plain
- 3/4 cup jack cheese, grated
- 3/4 cup cheddar cheese, grated
- 1/2 cup sliced olives (optional)
Directions
- In a large skillet, brown turkey with onion and garlic.
- Add picante sauce, spinach, tomato sauce, tomatoes, bell pepper, lime juice and salt.
- Blend together and simmer 15 minutes, uncovered.
- Lightly oil a 9" X 13" dish.
- Cover bottom and sides with six tortillas.
- Spread yogurt over tortillas.
- Cover yogurt with half of meat sauce.
- Layer remaining six tortillas over meat and top with remaining meat sauce.
- Bake at 350º F for 30 minutes.
- Sprinkle with cheese and olives and bake for additional minutes.
- Remove from oven and let stand 10 minutes prior to cutting into squares to serve.
