Taco Soup

organic-frozen-white-ground-turkey

  • 1 lb Ground turkey
  • 1 tbsp Olive oil
  • 1 ounce Taco seasoning
  • 2 tbsp Butter
  • Garlic gloves(minced)
  • Small onion(chopped)
  • Jalepeno(chopped)
  • 4 cups Chicken broth
  • 10 ounces Red enchilada sauce
  • Can of diced tomatoes
  • Can of black beans(drained)
  • 1 tsp Dried oregano
  • 1 cup Cheddar cheese(shredded)
  • 1 cup Jack cheese(shredded
  • 3/4 cup Sour cream
  • Avocado To garnish
  • Chives To garnish

  1. In a large pot, add 1 tbsp of olive oil to a pan on medium heat. Add the ground turkey to the pot and cook through.
  2. Add the taco seasoning and stir until well combined.
  3. Add the butter, garlic, onions, and jalapeño until onions are transluscent.
  4. Add chicken broth, enchilada sauce and diced tomatoes. Bring to a boil and reduce to a simmer. Cook for 15 minutes.
  5. Add the drained black beans and oregano.
  6. Reduce heat to low and then stir in the sour cream, cheddar and jack cheeses until the cheese is melted and well combined.
