Mini Shepherd's Pie

Ingredients

  • 1/2 lb Ground Turkey
  • 1 box Refrigerated pie crust
  • Small onion (chopped)
  • 4 tsp Flour
  • 3/4 cup Beef broth
  • 1.5 cups Mixed frozen vegetable
  • 3 cups Mashed potatoes
  • To Taste Salt and Pepper

Directions

  1. Preheat oven to 375 degrees. Lightly grease a muffin tray and set aside.
  2. Using your pie dough crust, cut 4-inch circles. Place each circle in the muffin tray and press into the tray to form the crust of your mini Shepherd Pies.
  3. Bake crusts for 11 minutes.
  4. While your pie crusts are baking, brown the turkey over medium heat. Then add the onion and cook until onion is translucent and the turkey is completely cooked.
  5. Stir in flour until completely incorporated. Then add the broth and cook until thickened.
  6. Then stir in the vegetables.
  7. Fill each of the pie dough crusts with the meat mixture. Then top the mixture with mashed potatoes. Bake for 20 minutes of until the mashed potatoes are slightly golden brown.
