Diestel Smoked Turkey Thigh or Drumsticks

1 (16-oz) package dried green split peas, rinsed
1 Diestel Smoked Turkey Thigh or 2 Diestel Smoked Turkey Drumsticks
1 cup chopped carrots
1 1/2 cup chopped yellow onion
3 ribs celery, chopped (leaves optional)
4 cloves garlic, minced
2 bay leaf
1/4 cup chopped fresh parsley
1 tsp. cumin
1 tsp. thyme
Salt and pepper to taste
6 cups turkey/chicken broth
Layer ingredients in slow cooker in the order given, adding the broth last. Do not stir ingredients. Cover and cook on high 4-5 hours or on low 8-10 hours until peas are very soft and turkey falls off the bone.
