Turkey Enchilada Casserole

A quick and easy Diestel Turkey fiesta!

Diestel product:

100% Ground Turkey


1 1/2 lbs. Diestel 100% Ground Turkey
1 small onion, chopped
1 clove garlic, pressed
1 1/2 cups picante sauce
1-10 oz. package frozen chopped spinach, thawed and well drained
1 cup tomato sauce
2 medium tomatoes, chopped
1 large bell pepper, diced
1 Tbsp. lime juice
1 tsp. salt
12 corn tortillas
1 cup yogurt, plain
3/4 cup jack cheese, grated
3/4 cup cheddar cheese, grated
1/2 cup sliced olives (optional)


In a large skillet, brown turkey with onion and garlic. Add picante sauce, spinach, tomato sauce, tomatoes, bell pepper, lime juice and salt. Blend together and simmer 15 minutes, uncovered.

Lightly oil a 9″ X 13″ dish. Cover bottom and sides with six tortillas. Spread yogurt over tortillas. Cover yogurt with half of meat sauce. layer remaining six tortillas over meat and top with remaining meat sauce. Bake at 350ยบ F for 30 minutes. Sprinkle with cheese and olives and bake for additional minutes. Remove from oven and let stand 10 minutes prior to cutting into squares to serve.

Serves 6-8.
