Turkey Meatball Soup

Meatballs make everyone happy. Leaner than beef, ground turkey still delivers that satisfying flavor and protein kick to fuel your day.

Ingredients

  • 2 lbs Diestel ground turkey
  • 1/2 cup grated onion
  • 2 tbsp nutritional yeast
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/3 cup almond flour
  • 1 medium onion (chopped)
  • 2 cups carrots (chopped)
  • 2 cups celery (chopped)
  • 2 cups zucchini (chopped)
  • 1 15 oz can diced tomatoes
  • 4 cups chicken broth
  • 1 tbsp Italian seasoning
  • 2 tsp salt
  • 4 cups spinach
  • 1 lemon (juiced)

Directions

  1. In a large bowl, combine the grated onion, nutritional yeast, 1 tsp salt, 1 tsp garlic powder, and almond flour. Stir until well combined.
  2. Form meatballs, about 1 tsp each.
  3. In a large slow cooker, add the onion, carrots, celery, zucchini, diced tomatoes, chicken broth, italian seasoning, and salt. Stir until well combined.
  4. Add the meatballs and press into liquid.
  5. Cover and cook on low for 6 – 8 hours or until meatballs are cooked through.
  6. Uncover, add the spinach and cook for 5 minutes. Add the lemon juice and stir until well combined.
  7. Serve and enjoy!
