Thai Lettuce Wraps

These Thai Turkey Lettuce wraps are easy to make for a healthy, low-carb lunch or dinner. Plus, you can enjoy them in less than 30-minutes!

Ingredients

  • 1 Tbsp Olive Oil
  • 1/2 lb Ground Turkey
  • 1/4 cup Onion (minced)
  • 1/2 Large Carrot (grated)
  • 1/2 cup Bell pepper (minced)
  • 1 Tbsp Ginger (minced)
  • 2 Gloves Garlic (minced)
  • 1/8 cup Green Onions
  • 1/2 Tbsp Thai Curry Paste
  • 1/2 Tbsp Soy Sauce
  • 1/2 Tbsp Honey
  • 1/2 Tbsp Fish Sauce
  • Lettuce Leaves
  • Lime for garnish
  • Purple cabbage for garnish

Directions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion, carrot, bell pepper and cook for 13 minutes.
  3. While the veggies are cooking, mix together the thai curry paste, soy sauce, honey, and fish sauce in a small bowl. Set aside.
  4. Once the veggies are beginning to caramalize, add ginger and garlic and cook for one more minute.
  5. Add turkey and cook until no longer pink and slightly browned. Then mix in the veggies into the ground turkey.
  6. Add the sauce into the mix and cook for 4 minutes.
  7. Serve. the mixture in lettuce cups. Garnish with lime, chives and purple cabbage.
