Super Quick Turkey Minestrone

Soup season is here! That’s right, we’re all about those comfort foods when the weather begins to dip. Enter, our pressure cooker because we love a 30-minute meal that tastes like it’s been simmering all day long.

  • 1 lb Ground Turkey
  • 1 tbsp Olive Oil
  • 1/2 cup Diced Onion
  • 2 tbsp Minced Garlic
  • Bay Leaf
  • 2 tbsp Italian Seasoning
  • 1 1/2 cup Pasta
  • 1 can Diced Tomatoes
  • 1 can Tomato Sauce
  • 2 cups Frozen Veggies
  • 6 cups Chicken Broth


  1. Turn on your pressure cooker and set to “Saute.”
  2. Add olive oil, onion and garlic to pot and cook until the onion is translucent.
  3. Then add the ground turkey to the pot and saute until it is cooked completely.
  4. Add all remaining ingredients and change the settings from Saute to Pressure Cook on High.
  5. Set pressure cooker for 3 minutes, cover and cook.
  6. Note that even though you set for 3 minutes, it will take longer for your pressure cooker to pressurize and heat up.
  7. Once the timer goes off you can slow release or quick release the pressure cooker.
  8. Serve and enjoy!
