Pumpkin Whoopie Pies

For those that stuff themselves a little too full for Thanksgiving, we’re delighted to introduce you to the mini Pumpkin Whoopie Pie!

Ingredients

  • 1 Stick Melted Butter
  • 1 Cup Brown Sugar
  • Eggs
  • 1 Cup Pumpkin puree
  • 1 Tbsp Pumpkin pie spice
  • 1 1/2 Tsp Vanilla
  • 1 Tsp Baking powder
  • 1 Tsp Baking soda
  • 1 2/3 Cup Flour
  • Pinch Salt
  • 1/2 Stick Butter(softened)
  • 4 Ounces Cream cheese(chilled)
  • 1 Cup Powered sugar

Directions

  1. Preheat oven to 350 degrees and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together melted butter, brown sugar, eggs, pumpkin puree, pumpkin pie spice, vanilla, baking powder, baking soda and salt.
  3. Then fold in the flour gently until well combined.
  4. Using a spoon, drop mounds of batter in your desired size.
  5. Bake for 10 minutes. Then transfer to a rack to cool completely.
  6. While the cakes are cooling, use a handmixer to combine the softened butter, cream cheese and powdered sugar until well combined.
  7. Sandwich the frosting between two of the cakes to form a sandwich.
