Easy Baked Egg Cups

Meal prep like never before with these easy Baked Egg Cups with our Diestel Breakfast Sausage.

Ingredients

  • 1 lb Frozen breakfast sausage
  • 1 tbsp Olive oil
  • 10 Eggs
  • 1 cup Milk
  • 1 tsp Salt
  • 1 1/2 cups Tomatoes(chopped)
  • 2 cups Spinach(chopped)
  • 1/2 cup Fresh mozzarella

Directions

  1. Preheat oven to 350 degrees.
  2. Line a large baking sheet with parchment paper. Spray eight ramekins with cooking spray. Place the ramekins on the baking sheet.
  3. Add olive oil to a large skillet over medium heat. Add the Breakfast Sausage to the pan and cook until browned.
  4. In a large bowl, whisk together eggs, milk and salt & pepper.
  5. Add the cooked sausage, tomatoes, spinach and mozzarella. Mix until well combined.
  6. Evenly distribute the egg mixture among the ramekins. Bake for 30 minutes.
  7. Cool for 5 minutes before serving. Ramekins will be hot.
