Turkey Breast Parmesan

Diestel Turkey goes Italian. Serve with your favorite pasta!

Ingredients

  • 6 Diestel Turkey Breast Tenderloins (4-6 oz. each)
  • 1 egg
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup bread crumbs
  • 1/2 cup Parmesan cheese, split
  • 2 Tbsp olive oil
  • 2 cloves garlic, pressed
  • 2 cups tomato sauce
  • 1/4 tsp dry basil
  • 1/2 cup grated mozzarella cheese

Directions

  1. Combine eggs, salt and pepper in bowl. Set aside.
  2. Combine bread crumbs and 1/4 cup parmesan cheese. Set aside.
  3. Dip breast pieces into egg mixture and then lightly into crumb mixture.
  4. Heat oil in pan. Brown breast on both sides and set in a single layer in baking dish.
  5. In pan, sauté garlic briefly. Add tomato sauce and basil and simmer for 10 minutes.
  6. Sprinkle breast pieces with 2 Tbsp parmesan cheese.
  7. Spoon tomato sauce over all.
  8. Sprinkle tops with remaining 2 Tbsp parmesan cheese.
  9. Cover with mozzarella cheese.
  10. Bake covered at 350° F for 20 minutes.
